I have baked this cake on various occasions, even at fancy dinner parties and every time people ask whats the secret to that extra-light texture with just the slightest hint of citrus.Prep: 30 minutesCook: 1 hr 15 minutesServings: 10-12Cake: 1 to 2 cups granulated sugar 1 cups butter, softened 5 eggs 3 cups all-purpose flour, sifted 2 tablespoons lemon juice 1 teaspoon vanilla extract 1 cup lemon-lime carbonated beverageGlaze: 1 cup sifted confectioners' sugar cup milk teaspoon vanilla extractMethod1. Preheat oven to 180 degrees.2. Generously grease and flour a tube pan3. To make the glaze, whisk together sugar, milk, and vanilla extract until glaze is smooth and keep aside.4. Beat white sugar and butter together in a bowl using an electric mixer until creamy and pale5. Add eggs, one at a time, mixing well after each addition.6. Add in flour alternately with the soda, blending well after each addition until batter is well combined. Do not overmix the mixture7. Stir in lemon juice and vanilla extract.8.
