This easy Prawn Toast recipe is a perfect combination of crispy fried bread with seasoned prawn spread and sesame seeds. The first time I ate prawn toast I was disappointed - they were overly greasy, with very little prawn layer or flavour. But recently I had last minute guests over and I decided to whip an appetizer up with what was available in the fridge. Managed to impress the guests by serving up a classic Chinese appetizer in less than 20 minutes.
Makes: 12 triangles
INGREDIENTS:
- 500 grams raw prawn tails, peeled and cleaned
- 4-5 garlic cloves, roughly chopped
- 2 teaspoons ginger, finely grated
- 1 teaspoon caster sugar
- 2-3 teaspoon soy sauce
- Pinch of salt
- 1 cup spring onion greens, finely chopped
- 6 slices sandwich bread
- 100g white sesame seeds
- Oil, for frying
For the Dip:
- 3 tablespoons mayonnaise
- 2 tablespoons sriracha
METHOD:
- Blitz prawns, garlic, ginger, sugar, soy sauce and salt into a paste.
- Remove and transfer to a mixing bowl.
- Stir in finely chopped spring onion.
- To assemble, slice the sandwich breads into triangles.
- Spread the prawn mixture on top taking it all the way to the edges.
- Press prawn side down into a plate filled with the sesame seeds to stick.
- Fill a deep pan with oil to about two thirds.
- Gently fry each slice of bread prawn side down for about 2 - 3 minutes before turning over to cook for a further 1 - 2 minutes.
- Garnish with spring onions and serve immediately with a dipping sauce of your choice.
- To make the dipping sauce, mix the mayonnaise and sriracha and garnish with spring onions.
